I started reading about canning and home preserving and was putting information together I found on the internet. Stop right there. Then I purchased this book and it is the complete guide. Filled with tables for canning times for all garden vegetables, fruits, meats -- everthing. It tells you how to prepare the food you are canning, how to pack the jar, process times listed for everything you could imagine. If you want the bible for home canning this is it. A little funny side note - this is the second book I purchased, I spilled tomato juice on the first one while canning home made soup last week. So you can see this is a reference book that is on the counter while you are working. Great Book.
